I am back.....It has been a while. But I am welcoming you back with an exceptionally easy yet totally delish new recipe. I don't know about you, but I loved Honey bunches of Oats before I had celiacs.. I may or may have not been guilty of going thru the box to find all the big granola clusters and would have my mom say " Um did you eat all the granola out of the cereal".......
Yes guilty. I did. I can't help it. Once you eat one of those deliciously addictive clusters you want more. I always thought they should just make a whole box of just the clusters.....and then years later they did.....I should have pitched that to them years earlier ha ha....
But for that reason I wanted to find a good recipe in which I can make my own healthy gluten free granola clusters myself.....
The perks of making your own is 1. its cheaper 2. you can control what your putting into it 3. you can tweak it to make it any flavor or kind that you would like and last but not least 4. You can eat it as its coming out of the oven if your impatient like me.
The thing that I notice about granola though is that I make a batch and can eat it within a few days, few leaning towards 2 days rather than 4, ha. Its so addicting I cant just have 1/4 cup or 1/2 cup, so I make it and its gone so fast I wished I had made more. This gives you a lot but I wouldn't say this is a ton. It looks like way more when your making it then by the time its done.
The reason I have not been blogging is much is because I have been working on a lot of signs for my new etsy shop. RusticBarnDecorEtsy shop Please go check it out and let me know what you think. Its newer so I don't have a lot up in the shop yet but its getting there. I didn't know what to expect with it. It took a few weeks for me to get my first order but then I got 3 right in a row. And of course, they all wanted the same sign. So I am making them custom so they all can get what they want which I love, but its funny how basically all of my view (well 90% of them) all our for this one sign. Then you start thinking do they not like other signs? ha ha Welcome to the world of retail. Ha
Skinny Granola Clusters
I would use this as a base recipe and then tweak it with add ins. Most of the granola will end up in clusters but some will be tinier small granola.
3 cups Oats old fashioned (gluten free is you want this to be GF)
1/2 cup almond flour
1/4 cup oat flour or brown rice flour
3/4 cups almonds ( I broke mine up into a little bit smaller pieces) You could omit
1/2 tsp salt
1/4 cup of coconut oil ( melted)
1/2 cup of splenda brown sugar ( I have been not using splenda as much when cooking except for my brown sugar splenda)
1/4 cup honey ( or brown rice syrup if your vegan, agave works but doesn't clump as good) I think I ended up adding a little agave to it to to make it spread further
1 tsp vanilla extract
Preheat oven to 300' 9 by 13 pan lined with parchment paper ( clumps better with parchment paper over the slip mat for some reason)
This is pretty simple.
In a bowl toss the oats, flours, salt and almonds. Then pour coconut oil melted over the mixture and mix really well trying to coat a lot of dry ingredients.
In a saucepan combine honey, brown sugar, over medium heat till sugar dissolves. Remove from heat and then add vanilla.
Pour over oats. mix till all of the mixture covers all the dry ingredients. break up any lumps. Coat as evenly as you can. Then spread it onto pan. Basically pour it like a cake batter, then make it even and then flatten it with a spatula so its all pressed together and flat on top and all touching.. Press down to make sure its all sticking together this is how it will end up clumping.
Bake for 40 min rotating pan every 10 min. Then remove pan. Let it sit for 10 min then cut into small clumps or your preferred clump size.. Put back in the oven and bake another 10 minutes..
Remove from oven and let cool, or pop a few into your mouth and eat even though you burn your tongue :)
Enjoy. Store your granola in a sealed container in the fridge.

Well hello to all my skinny baking friends. It has been to long but to apologize for my absence on my blog I am going to give you a delectable little treat.
Although I will say there is irony for this recipe. I have tried so many recipes to get a donut that taste like the little cake donuts covered in chocolate by hostess and was never successful. But by not trying I used my skinny vanilla cupcake recipe and simply add 1 tbsp of cornstarch to thicken it up and it made the perfect cake for the donut.
So this is so easy......
Skinny Vanilla Cake + I added 1 tbsp of cornstarch (gluten free)
bake them any way you like donuts, donut pan or donut holes..... the holes are easiest to coat
I have a new baby cakes cake pop maker and you can make donut holes too. :) love it
cool then add the
1 cup of chocolate chips and 2 tbsp of coconut oil melt together in 30 second intervals till melted.
You can make chocolate from cocoa, coconut oil and some agave as well.
Altho this is a recipe I already had and didn't know it, it works great as a donut as well....
